About
In spring, the landscape is abundant with wild edible greens and seasonal foods traditionally valued for their role in renewal, movement, and support of liver and gallbladder function. This guided tasting experience explores springtime macrobiotic cooking through wild and seasonal ingredients associated with the Wood season.
Tim will introduce local spring greens such as nettles, chickweed, and nasturtium, sharing where they appear in the landscape and how they have been used across cultures as seasonal foods. Guests will enjoy a series of small tastings including light miso soup, gently dressed noodles, and wild green accompaniments, finished live and paired with tea.
Visual imagery will connect the foods on the table to the land beyond the tea house, weaving together macrobiotic philosophy, Five Phase seasonal understanding, and ecological awareness. The experience is offered as a sensory and educational tasting ritual centered on timing, simplicity, and spring renewal.
